  • 1 lb. bulk Italian sausage, cooked, crumbled, and drained
  • 4 med. russet potatoes, peeled and thinly sliced
  • 1 C. onion, sliced
  • 1 1/2 C. green pepper, chopped
  • 1 lb. mozzarella cheese, shredded
  • 1/2 C. Cheddar cheese, shredded
  • one 15-oz. can chunky tomato sauce
  • 1/2 tsp. salt
  • freshly ground pepper
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • 1 clove garlic, minced

Preheat oven to 350 degrees.  Grease a 7x11 inch baking dish.  Combine potatoes, half of the mozzarella cheese, and half of the onion in a baking dish. Sprinkle with salt, pepper, half of oregano and half of basil.  Top potato mixture with cooked sausage, green pepper, and remaining onion, oregano, basil, and garlic.  Pour tomato sauce evenly over all.  Bake uncovered for 1 hour.  Top with remaining mozzarella cheese and Cheddar cheese.  Sprinkle with additional basil.  Bake 1/2 hour or until the potatoes are tender.

Serve with: Mixed Greens with Raspberry Dressing
