Italian Potato Salad

This is an Italian version of potato salad. The taste of the fresh parsley, garlic and olive oil give this recipe a very unique taste. My mom makes this for family functions and it is always well received.  I make this for all of my office functions and it is always requested when we have a carry-in luncheon. You can make this ahead of time.

Ingredients

  • 1 5-lb. bag red potatoes, boiled and cut into bite-size pieces
  • 3/4 jar Bell View red peppers, cut into bite-size pieces
  • 1/4 C. sliced Spanish olives
  • 2-3 cloves fresh garlic, minced
  • 1 handful fresh parsley, diced
  • 1/4 C. diced celery
  • 1/8 C. finely chopped onion
  • salt and pepper to taste
  • olive oil

Directions

Boil potatoes until tender. When cool, cut into bite size pieces. Pour enough olive oil over potatoes to moisten (you can also use some juice from the red peppers). In a bowl, mix all ingredients together and let marinate for a few hours. Serve at room temperature.Note: If you make this ahead of time, just remember to take out of refrigerator about an hour before serving so the olive oil can come to room temperature. Mix well before serving.

  • This sounds great but I'm not sure if I have ever seen " Bell View red peppers". If I can not find them is there something else you can replace them with ?
