  • 8 oz. penne pasta, cooked
  • 1 jar red peppers
  • ½ C. Parmesan
  • 2 tsp. honey
  • ½ tsp. pepper flakes
  • 3 T. olive oil
  • 1 clove minced garlic
  • 1 can crushed tomatoes
  • 1 ½ C. shredded mozzarella

Using a food processor, add the red peppers, Parmesan, honey, pepper flakes, and half of the tomatoes. Pulse until well combined. Add 2 T. olive oil and salt and pepper to taste, then set aside. In a heavy skillet, heat the rest of the olive oil along with the garlic and cook for 2 minutes. Add in the sauce, followed by the cooked pasta. Toss, combining the pasta with the sauce well. Top with the shredded cheese, then bake in the oven for 8 minutes at 350 degrees.
