  • ½ onion, finely diced
  • ½ can cream of chicken soup
  • ¼ cup cheddar cheese, shredded
  • ¼ cup mozzarella cheese, shredded
  • 8oz box yellow rice, cooked according to the box
  • 1/8 cup parmesan cheese, grated

Add the onion to the crockpot and pour in the soup. Cover and cook on high for 2-3 hours. In the last 10 minutes of cooking, add the rice and mozzarella and cheddar cheeses and mix to combine. Serve topped with parmesan cheese.
