Italian Rice & Sausage
Ingredients
- 1 1/2 lb. wweet or hot Italian sausage
- 1 26 oz. large can diced tomatos
- 1/2 C. water
- 1 large green pepper
- 1 large red pepper
- 1 large sweet vadalia onion
- 3 C. minute rice
- 2 Tbs. ground oregano
- 2 Tbs. extra virgin olive oil
Directions
Saute the onions and peppers in the olive oil until tender. Remove the sausage from the casing and cook until brown. Add the canned tomatos, ground oregano and water. Bring to a boil, add rice and fold into tomato/sausage mixture. Cover and remove from heat. Let stand 15 minutes. Serve.
