Italian Roast Potatoes
Ingredients
- 2 lbs. baking potatoes
- 3 lg. onions, coarsely chopped
- 1/2 C. olive oil
- 1 tsp. salt
- 1/4 tsp. pepper
Directions
Peel potatoes and cut in 1/2-inch cubes. Place potatoes and onions in a rimmed 10x15-inch baking pan and mix evenly with the oil, salt and pepper. Bake uncovered in oven at 325 degrees for 2-2 1/2 hours or until vegetables are a light golden color and potatoes mash very easily. Stir occasionally.
