  • ½ lb. mushrooms
  • 2 C. cauliflower
  • 2 C. grape tomatoes
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 1 C. chopped asparagus
  • 2 T. olive oil
  • 1 T. basil
  • 1 T. oregano
  • 1 T. thyme
  • 1 T. Rosemary
  • 1 T. parsley
  • ½ T. garlic powder
  • ½ T. onion powder
  • 1 tsp. salt
  • 1 tsp. pepper

Preheat oven to 400 degrees and line a baking sheet with aluminum foil. Begin by chopping all the big vegetables and mix all of them in a bowl with the spices and oil. Mix until the veggies are completely covered. Pour the mix onto the baking sheet and cook for 20 minutes or until vegetables are tender. Serve hot!
