  • 12 oz. Sweet Italian Sausage
  • 1 Tbs. Canola Oil
  • 1 Large Onion, chopped
  • 4 Garlic Cloves
  • 1 C. Long-Grain White Rice, uncooked
  • 1/2 C. Low-Sodium Chicken Broth
  • 1/2 tsp. Dried Oregano
  • 1/2 tsp. Dried Rosemary
  • 1/2 tsp. Ground Black Pepper
  • 1 C. Shredded Mozzarella Cheese

Preheat the oven to 375 degrees. Lightly grease a 9x13" baking dish with nonstick cooking spray. Prick sausages with a fork. In a large skillet over medium-high heat, combine the sausages with 1/4 cup of water. Cover and cook for 5 minutes. Uncover and continue cooking for 10 minutes or until sausages have been browned. Without draining the skillet, remove the sausages. Cut the sausages into slices and set them aside. Pour the canola oil into the skillet to warm. Add the onions and cook until tender. Add the garlic cloves and sauté until fragrant. Stir in the sausage slices, rice, chicken broth, oregano, rosemary, pepper, and mozzarella. Pour casserole into prepared dish and bake for 30 minutes until warmed through and golden-brown on top.
