Italian Sausage and Potato Casserole

Ingredients
- 3-4 sm. Russet potatoes
- 5 links Italian sausage
- 1 onion, chopped
- 4 oz. mushrooms, chopped
- 2 eggs
- 1/4 C. heavy cream
- 1/4 C. milk
- 2 Tbs. butter
- 1/2 C. Italian cheese, shredded
Directions
Peel potatoes and cut them into half-inch cubes. Boil until tender and drain. Cook Italian sausage in a frying pan without oil for 5-6 minutes. Heat butter in another frying pan and cook onion and mushroom until browned. Add potatoes. Season with salt and pepper. Preheat the oven to 350 degrees. Place cooked potatoes, mushroom and onion mixture in the casserole with Italian sausages. In a bowl, combine eggs, milk, and heavy cream. Whisk well and pour into the casserole. Sprinkle Italian cheese on top and bake for 40-45 minutes.
