For a taste of Italy easily baked up in the oven, try your hand at this casserole.

Ingredients

  • 1 red bell pepper; julienned
  • 1 green pepper; julienned
  • 1 1/2 lbs. Italian sausage; browned, cut into 2" pieces
  • 2 onions; sliced
  • 1 medium potatoes; diced into l" pieces
  • 2 Tbs. dry basil
  • salt and pepper to taste
  • 28 oz. canned tomatoes (3 C.); diced with juice

Combine all ingredients into large covered casserole and bake at 350 for about 1 1/2 hrs.

Serves 4.
