  • 1 lb. Italian sausage, chopped
  • 1 C. onion, chopped
  • 2 cloves garlic, minced
  • 1 (28-oz.) can tomatoes with liquid
  • 3 Tbs. tomato paste
  • 7 C. beef broth
  • 1 C. dry red wine
  • 2 Tbs. dried basil
  • 2 medium zucchini, diced
  • 1/2 C. parsley, chopped
  • 1 C. pasta of your choice

In a large pot, place sausage and sauté until lightly browned. Add onions and garlic and saute until soft. Add tomatoes, tomato paste, broth, red wine, basil and oregano. Cook uncovered over moderate heat for 30 minutes, while stirring occasionally. Add zucchini, parsley and pasta and continue cooking until pasta is tender. Season with salt and pepper to taste. Serve with Parmesan cheese.
