Italian Sausage Soup
Ingredients
- 1 Tbs. oil
- 1 1/2 lb. Italian sausage
- 1 sm. green pepper, diced
- 1 med. red or yellow pepper, diced
- 1 med. onion, diced
- 2 cans chicken broth
- 2 cans diced tomatoes with Italian seasonings
- 1 tsp. sugar
- 1 can white kidney beans or navy beans, rinsed and drained
- salt and pepper to taste
- 1 C. macaroni, uncooked
- shredded Mozzarella cheese
Directions
Brown sausage in oil until almost done. Add peppers and onions and saute until softened. Add chicken broth, diced tomatoes, sugar and beans and bring to a boil. Add macaroni and simmer on medium heat 10 minutes or until macaroni is tender, stirring occasionally. Top with shredded cheese. This is good with breadsticks or garlic bread.
