Italian Sausage Soup

This soup is the ultimate comfort food for those cold winter days when you want something warm and satisfying. It is a twist on chili that your whole family will want you to make again and again.

Ingredients

  • 1 Tbs. oil
  • 1 1/2 lb. Italian sausage
  • 1 sm. green pepper, diced
  • 1 med. red or yellow pepper, diced
  • 1 med. onion, diced
  • 2 cans chicken broth
  • 2 cans diced tomatoes with Italian seasonings
  • 1 tsp. sugar
  • 1 can white kidney beans or navy beans, rinsed and drained
  • salt and pepper to taste
  • 1 C. macaroni, uncooked
  • shredded Mozzarella cheese

Directions

Brown sausage in oil until almost done. Add peppers and onions and saute until softened. Add chicken broth, diced tomatoes, sugar and beans and bring to a boil. Add macaroni and simmer on medium heat 10 minutes or until macaroni is tender, stirring occasionally. Top with shredded cheese. This is good with breadsticks or garlic bread.
