Italian Scalloped Potatoes
Ingredients
- 2 C. water
- 1 C. whole tomatoes
- 1/4 tsp. basil
- 1 pkg. scalloped potato mix
- 1/4 C. Parmesan cheese
- 1 C. French fried onion rings
Directions
Combine water, tomatoes and basil in saucepan. Bring to a boil. In a greased 2 quart casserole dish, combine potatoes, cheese and 1/2 onions. Stir tomato mixture into potatoes. Cover and bake for 40-45 minutes at 400 degrees. Uncover and top with remaining onions, bake an additional 5 minutes.
Yield: 4-6 servings
