Italian Spinach Pie
Ingredients
- 2 pkg. frozen spinach, defrosted and squeezed dry
- 1 small onion, diced
- 2 Tbs. light oil
- 6 eggs, beaten
- 1/4 C. parmesan
- 4 grinds black pepper
- 1 tsp. dried onion
- 1/2 C. shredded mozzarella cheese, divided
Directions
Using medium cast iron skillet, saute onions in oil until slightly golden, then remove from heat and cool.
In a bowl, combine all ingredients (using only half the mozzarella).
Using the same skillet that you sauteed the onions and without wiping it out, heat skillet and spray with cooking spray (to avoid sticking). Add mixture to heated skillet and once bottom is set, place in 350 degree preheated oven and bake about 10-15 minutes until cooked through. Sprinkle remaining cheese and broil about 5 minutes until cheese is bubbly and golden.
Cook's notes: After sautéing the onions, this can be completely cooked in the oven in a casserole dish.
Also, this can be made in the skillet on the stove as mini pies. Add enough of the mixture the size of a silver dollar pancake and cook on both sides until the eggs are set and cooked (combine all the mozzarella in this recipe). Sprinkle with additional parmesan after cooking. Serve with crunchy, soft, Italian bread and salad.
