Italian Style Green Beans

Parmesan, olive oil, and plenty of Italian herbs create a zesty vegetable side item.

Ingredients

  • 2 lbs. fresh green beans, topped and tailed 1 quart chopped tomatoes with juice
  • 1-1/2 C. chopped onions
  • 1 Tbs. minced garlic
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • salt and pepper to taste
  • extra virgin olive oil
  • 1 C. grated Parmesan cheese

Directions

Top and tail green beans and cut into 1-1/2-inch pieces if large; otherwise leave them whole. Cook them in water until tender; drain. Sauté onions in extra virgin olive oil until softened. At the tail end of sautéing onions, add chopped garlic and sauté one minute more. In a large pot, combine all ingredients. Cook on medium-low until hot.

Yields 6 to 8 servings.
