These stuffed peppers are fun to carve and even more fun to eat. Dig into these chili flavored turkey stuffed jack-o-lantern peppers.

  • 4 medium orange bell peppers
  • 2 tsp. olive oil
  • 1 lb ground lean turkey
  • ½ medium onion, chopped
  • 1 Tsp. garlic powder
  • 1 Tbsp. chili powder
  • ½ tsp. ground cumin
  • 1 pinch black pepper
  • 1 pinch salt
  • 1 can tomato sauce
  • 1 cup kidney beans, drained and rinsed
  • 1 cup cooked brown rice
  • ¼ cup water
  • ½ cup shredded pepper jack cheese

Preheat oven to 400º F.
Carefully cut the top of the bell peppers off, including the stem and set the tops aside. Carve out the seeds and veins from the bell peppers, and carve a jack-o-lantern into the front side. Then, stand the peppers upright on a baking dish.
Season the ground turkey with garlic, chili powder,
Heat oil in large nonstick skillet over medium-high heat.
Add the onion, garlic powder, chili powder, cumin, salt, and pepper to the skillet, letting it simmer before adding in the ground turkey. Let the turkey cook until browned, and then add in the tomato sauce, beans, and rice. Stir frequently for 4-5 minutes while cooking.
Fill peppers with the turkey mixture, then top with reserved stem end of peppers Add water to the baking dish. Cover with foil.
Bake peppers for 12 to 15 minutes, or until tender-crisp.
Remove stem top of peppers, sprinkle evenly with cheese. Bake until cheese is melted.
Replace tops and serve.
