  • 2 20-ounce cans green jackfruit, strained
  • 1 cup store-bought coleslaw
  • 1 diced onion
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup BBQ sauce (of your preferred variety)
  • 1 tsp paprika
  • 1/2 tsp garlic salt
  • 1/2 tsp onion powder
  • pepper, to taste
  • 6 brioche buns

The first thing you need to do is prep your jackfruit. Don’t sweat it if this is your first time cooking with this trendy fig relative. Just crack open your can, then drain and rinse your fruit. Place in a mixing bowl, and add your BBQ sauce and ½ cup of water. Mix thoroughly.

Next, we need to get frying. Heat olive oil in a medium to large-sized skillet. Add your onions and cook them until they begin to become tender. Then, add your minced garlic to the mix and cook for another minute or so. Finally, mix in the jackfruit, BBQ sauce, and water mixture.

Now, you get to take a break and let it simmer. After stirring all of these ingredients together in your skillet turn heat down to medium-low. Continue to cook for 15 minutes or so stirring occasionally. Then, add another ½ cup water, cover and cook for another 15 minutes.

For this step, things are going to get a little messy. Use a potato masher or a large fork to break up the jackfruit (until it’s shredded like mouth-watering pulled pork).

Add your paprika, garlic salt, onion powder and pepper, then stir thoroughly. Add more BBQ sauce if desired.

Finally, it’s time to eat. Open your six buns, dividing your jackfruit pulled pork evenly among them. Then, top each with a heaping spoonful of coleslaw and serve.
