Jalapeno Cocktail Pie Casserole

This is an egg and jalapeno recipe that is so very good. I have had this recipe for years and have never seen it in recipe books. I can't remember where it came from, but if you serve this dish as a side dish, snack or appetizer you will get asked for the recipe every time. A hit at any occation. And so very easy to make.

Ingredients

  • 1 12 oz. jar sliced jalepenos, drained
  • 6-8 large eggs. beaten
  • 1 lb. sharp cheddar cheese, grated

Directions

Greese a 9x6-inch heat proof glass baking dish. Put half the cheese into the bottom of dish. Place jalapenos on top of cheese. Cover with remaining cheese. Pour eggs over top of cheese. Bake for 30 minutes at 350 degrees or until light brown. Cut into squares.
