  • 1/3 C. cooking oil
  • 1/3 C. flour
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2-3 jalapeno peppers, diced
  • 1 lb. sausage, sliced
  • 1 ½ lb. chicken, cubed
  • 4 cloves garlic, minced
  • 1 T. oregano
  • 2 tsp. thyme
  • 2 tsp. onion powder
  • 1 T. paprika
  • Salt and pepper to taste
  • 2 tsp. red pepper flakes
  • 4 C. chicken broth
  • 4 C. rice, cooked

Whisk together oil and flour; heat in a saucepan for 10 to 15 minutes, stirring continuously, as it thickens to create a roux. Place diced onion, bell pepper, and jalapenos in your crockpot. In a skillet, cook sausage slices and chicken pieces until everything is cooked through; transfer to crockpot. Pour roux over chicken, sausage, and veggies. Add in chicken broth, mix well, and cook on high for 4 to 5 hours. Before serving, stir in cooked rice, and heat through.
