Jamaican Chicken

Very simple and quickly prepared recipe. My family frequently requests this recipe served with mashed potatoes.

  • 6 boneless, skinless chicken breasts
  • 6 Tbs. butter, divided
  • 1 lg. onion, thinly sliced
  • 1 Tbs. garlic
  • 1 C. catsup
  • 1 C. water
  • 1 tsp. salt
  • 1 tsp. pepper

Melt 6 Tbs. butter. Use 3 Tbs. butter to brown chicken breasts, onion and garlic in butter, and set aside other 3 Tbs. Brown onion and garlic separately from chicken. Place chicken, onion, garlic (on top of chicken), and remaining melted butter in baking dish. Mix ketchup, salt , pepper and water in a bowl, and pour over chicken and onions. Cover with foil and bake at 350 degrees, for 45-60 minutes or until sauce has thickened
