Jammin' Jello Surprise

This is always a bit hit at gatherings. It is a light, cool and low fat dessert in which you can mix and match fruits and jello flavors to make it even more special. Add fresh fruit to the center to dress it up.

Ingredients

  • Nonstick cooking spray
  • 1 1/2 C. boiling water, divided
  • 1/2 C. mandarin oranges, drained
  • 1/2 C. crushed pineapple, drained
  • 1/2 C. mini marshmallows
  • 2 12-oz. cans (or 3 C. total) fat free evaporated milk, chilled and divided
  • 1 3-oz. pkg. orange flavored gelatin
  • 1 3-oz. pkg. tropical fusion flavored gelatin
  • 1 3-oz. pkg. lime flavored gelatin
  • 1/4 C. crushed pineapple, drained
  • 1/4 C. sliced fresh strawberries, for garnish
  • 1/4 C. fresh blueberries, for garnish

Coat Bundt pan or jello mold with nonstick cooking spray.For Mandarin Orange Layer:

Dissolve orange gelatin in 1/2 cup boiling water in blender and swirl around. Let stand for 10 minutes. Along with dissolved gelatin, to the blender add the DRAINED mandarin oranges and 1 cup evaporated milk; cover. Puree for 10 seconds or until well blended. Pour into greased Bundt pan. Refrigerate for 1 hour or until set.For Lime Layer:

Dissolve lime gelatin and 1/2 cup boiling water in blender and swirl until dissolved. To the blender, add 1 cup evaporated milk and blend 10 seconds or so. Pour into Bundt over orange layer and add marshmallows. Make sure to gently push the marshmallows down into the Jello a bit. Refrigerate for 1 hour or until set.For Pineapple Fusion Layer:

Add Tropical Fusion gelatin and 1/2 cup boiling water to blender. Swirl until dissolved. To the blender, add 1/2 cup crushed pineapple and remaining 1 cup evaporated milk. Puree 10 seconds or until well blended. Pour mixture over lime layer. Add remaining pineapple (for texture) spreading it around. Cover lightly and refrigerate at least for 4 hours or overnight.TO UNMOLD: Run point of knife around top of pan. If it looks like it is sticking, dip pan into a large pan of warm water for 15 seconds. Lift from water and dry off. Place serving platter on top of pan. Invert mold and platter together, shake slightly to loosen. Gently remove mold. Add fresh fruit to center of ring or around the jello mold. Cut into slices and serve.
