Try this Japanese inspired red bean rice recipe for a quick meal. All you need to do is cook the beans and rice together and its done. Great on its own or paired with vegetables and meat.

  • 3 C white rice
  • ½ C Japanese red beans (or regular red beans)
  • ¼ tsp salt
  • Water

Wash and drain the beans.
Then prepare a pot and add in the rice, red beans and salt. Fill the pot with water until it covers the rice and beans.

Set it on high heat and let it come to a boil.

Once it comes to a boil, reduce the heat, close with a lid and let it simmer for 10-15 minutes or until rice becomes tender.

When it is done, stir the contents to mix up the beans and rice. Serve hot.

* A rice cooker can also be used to cook the rice.
