Jefferson Davis Pie
Ingredients
- 1/2 C. butter or margarine, melted
- 1/4 tsp. salt
- 1/2 tsp. vanilla extract
- 1 3/4 C. granulated sugar
- 4 large eggs
- 2/3 C. milk
- 1 Tbs. all-purpose flour
- 3 Tbs. sweetened shredded coconut
- 3 Tbs. raisins
- 3 Tbs. chopped pecans
- 1 9 inch unbaked pie shell
Directions
In a bowl combine melted butter, salt, vanilla, sugar, eggs, milk, and flour. Set aside.
In another bowl combine shredded coconut, raisins, and chopped pecans. Spread coconut mixture evenly in unbaked pie shell. Pour the butter mixture on top. Bake at 325 degrees for 1 hour, or until the top is golden brown.
Yield: 8 servings
