Jerusalem-Style Falafel Sandwiches

- Falafel Recipe:
- 1 Cup Garbanzo Beans or Dried Chickpeas
- 1 bunch fresh Parsley (about 2 cups roughly chopped)
- 1 bunch fresh Cilantro (about 2 cups roughly chopped)
- 2 cloves Garlic
- 1 tsp Coriander Seeds
- 1 tsp Ground Coriander
- 1 tsp cumin
- 1/2 tsp baking soda
- 1/4 cup flour
- 1/2 tsp salt
- Tahini Sauce Recipe:
- 1 cup Sesame Seed Paste
- 1 cup of water
- 1/4 cup lemon juice
- 1 pinch of salt
Soak Garbanzo beans overnight. Using a food processor, blend all the ingredients until mixture appears greenish and very fine. Form the mixture into 1 1/4" balls. Heat a pot of oil to 375 degrees Fahrenheit. Drop balls into oil and fry until golden brown.
Mix all the Tahini sauce ingredients together until well blended and smooth.
To create the falafel sandwich, open pita bread, add 2 falafel balls, some salad and some tahini sauce. Add a second layer of falafel, salad and tahini. Then eat and enjoy your falafel sandwich.
