Jessica's Coconut Crisps
- 2 C. all purpose flour
- 3/4 tsp. baking powder
- 1/4 tsp. salt
- 3/4 C. butter or margarine, softened
- 1 C. sugar
- 1 large egg
- 1 tsp. vanilla
- 1 1/2 C. shredded sweetened coconut
Preheat oven to 375 F. Combine flour, baking powder, and salt in a medium bowl. Beat butter or margarine and the sugar in a mixer bowl at medium speed until light and fluffy. Beat in egg and vanilla. With mixer at low speed, beat in dry ingredients just until combined.
Stir in coconut. Drop dough by level tablespoonfuls onto ungreased cookie sheets. With bottom of glass dipped in flour, flatten each cookie to 1/4 inch thickness, then press with back of fork to form ridges. Bake 10 to 12 minutes, until the edges are golden. Transfer to racks to cool.
