  • 1/2 C. peeled and shredded jicama
  • 1/2 C. peeled and shredded carrots
  • 1/2 C. unpeeled and shredded zucchini
  • 1/2 sm. red bell peppers, seeded and cut into fine julienne strips
  • 1 Tbs. minced fresh cilantro
  • 1 tsp. canola oil
  • 1 1/2 tsp. fresh lime juice
  • dash cayenne pepper
