Ingredients

  • 2lb fresh green beans, trimmed
  • 1 small onion, sliced
  • ¼ cup feta cheese
  • 1 cup of toasted chopped walnuts and pecans
  • 3/4 cup extra-virgin olive oil
  • 1 tablespoon chopped fresh dill
  • 1/4 cup white wine vinegar
  • 1/2 teaspoon minced garlic
  • 1/4 tsp garlic salt

Slice your green beans into thirds, arrange them into a steamer basket and place them over boiling water for about 15 minutes.

Once your green beans are steamed to your desired tenderness, drop them quickly into cold water, drain, and dry.

Next, toss your green beans, feta, sliced onions, and nuts in a decent-sized salad bowl. Once evenly tossed, cover and chill the salad for an hour.

Now it’s time to prep your vinaigrette. Whisk together your olive, vinegar, chopped dill, and minced garlic. Cover this and chill alongside your salad.

Pour vinaigrette over green bean mixture, and chill 1 hour; toss everything together just before serving so your green beans don't become soggy.
