Ingredients

  • 2 C breadcrumbs
  • 1 lb potatoes, peeled
  • 1 lb smoked cod
  • 1 lemon, grated zest
  • 2 Tbs chopped fresh parsley
  • Salt and Pepper
  • 1 C Flour
  • 1 scrambled eggs
  • 3 Tbs vegetable oil
  • 1 thinly sliced tomato.
  • Arugala Lettuce
  • 1 onion, chopped into rings
  • Cheddar cheese

Preheat the oven to 300ยบ. Spread crumbs over baking sheet and dry in oven for 10-15 minutes until golden, stirring halfway through.

Cut potatoes into chunks. Boil potatoes in salted water for 10-15 minutes until tender. Drain well and mash with fork.

Put the fish in a frying pan with just enough water to cover. Bring to boil, reduce heat, cover and simmer for 5 minutes. Remove the fish with knife and put on plate. When cool enough to handle, remove the skin and any bones, shredding the cod's flesh.

Mix Potatoes with cod, lemon zest, parsley, salt and pepper. With floured hands, shape into 4 square patties.

Coat each cake in scrambled egg dip, then in dried breadcrumbs. Reshape if necessary.

Heat oil in a frying pan and fry the cakes over a medium heat for 5 minutes on each side, turning once, until golden on both sides.

Top with lettuce, sliced tomatoes, cheddar cheese, and onions rings. Serve.
