  • 12 boneless skinless chicken breast cutlets
  • 2 (8 ounce) cartons chive & onion cream cheese
  • 2 tablespoons of unsalted butter
  • Pinch of salt
  • 1/2 tsp. pepper
  • 12 slices of bacon
  • ½ a cup of spinach
  • ½ a cup of canned peas, drained
  • 1/3 cup of asparagus, chopped

Flatten the chicken to 1/2" thickness. Then spread 3 tablespoons of cream cheese over each chicken piece. Then put a dab of butter and sprinkle the chicken with salt. Finally, wrap the chicken up with bacon.
Place, the seam side down, in a greased pan. Then bake the chicken uncovered, at 400 for 35-40 minutes or until the juices run clear.
Then broil the chicken 6 inches from the heat for 5 minutes or until the bacon is crisp.
After the chicken is done cooking, put it back in the baking pan and surround it with peas, asparagus and spinach.
