  • 1 T. olive oil
  • 2 boneless chicken breasts, chopped into pieces
  • ½ C. onion, diced
  • ¼ C. celery, diced
  • 3 cloves garlic, minced
  • 1 C. teriyaki sauce
  • ¼ C. fresh parsley leaves, chopped

Preheat oven to 400 degrees. Rub mushrooms with olive oil and place upside down onto a baking sheet lined with foil. In a skillet, heat remaining oil and cook chicken until no longer pink while sautéing onion, celery, and garlic. Toss with teriyaki, mix in parsley, and spoon mixture into mushrooms. Bake for 15 to 20 minutes until caps are golden.
