This prime rib is perfect for the holidays, but makes a wonderful potluck recipe to bring along when you're in the mood for something special. This recipe is wonderful when paired with mashed potatoes and the jus makes a wonderful gravy!

Place the bone side down in a roasting pan. Mix the oil, seasonings, and garlic in a bowl and spread over the roast. Allow the roast to sit at room temperature for at least an hour.

Preheat the oven to 450 degrees and bake the roast for 20 minutes. After 20 minutes, insert a meat thermometer into the thickest part of the meat away from the bone.

Reduce the oven to 325 degrees and keep cooking until the internal temperature reaches 135 degrees (for medium rare), 145 degrees for medium. This should take between 1 hour and 15 minutes to 2 hours. Remove, cover with foil, and allow to sit for 10 to 15 minutes before slicing. Serve with the reserved jus.
