Use a french fry cutter or a mandolin and cut the potatoes in 1/6 inch strips.

Take a sauce pan and coat it with half of the peanut oil. Heat the oil at about 375 degrees (the temperature is important to make the potatoes fry to the right degree and to the right crispiness, so you may make use of a thermometer to ensure that you are cooking at the right temperature).

Pour in the french fries and cook for 3-4 minutes, cooking all the sides well and until the fries get soft and develop a light golden hue. Use a mesh stainer to remove the fries from the pan and drain over a paper towel.

After they've drained, submerge the fries into the oil again and cook for another 2 minutes until the fries turn a dark golden brown. Remove the fries, drain, and season with salt.
