- 1 C. All-Purpose Flour
- 1 C. All-Purpose Whole Wheat Flour
- 1 tsp. Baking Soda
- 1 Large Egg, beaten
- 2/3 C. Splenda No Calorie Sweetener Sugar Blend, Granulated
- 1/4 C. Brown Sugar
- 2 tsp. Vanilla Extract
- 2 tsp. Pure Mint Extract
- 1/4 C. Skim Milk
- 3/4 C. Plain Yogurt
- 1/3 C. Vegetable Oil
- 2 C. Peaches, diced
- 1/3 C. Slivered Almonds

Preheat the oven to 350 degrees. Lightly grease 2 9" cake pans with nonstick cooking spray. In a large bowl, mix together the flours and baking soda, and set aside. In a medium bowl, mix together the beaten egg, Splenda, brown sugar, vanilla extract, and mint extract. In a small bowl, mix together the skim milk and yogurt until thickened; whisk skim milk mixture along with vegetable oil into the egg mixture. Pour the wet ingredients into the dry ingredients, and mix until just combined. Gently fold diced peaches and almond slivers into the batter. Pour the batter into the pans. Bake for 40 minutes. Turn off heat, cover bread with foil, and let loaves sit in the oven for 5 more minutes until a toothpick inserted into the center of a loaf comes out clean. Let cool for several minutes before slicing and serving.
