  • ½ cup of olive oil
  • 1 cup of onions, diced
  • 1 tablespoon of garlic, minced
  • 1 teaspoon of salt
  • ½ teaspoon of pepper
  • ¼ teaspoon of cayenne pepper
  • ¼ teaspoon of dried thyme
  • 1 tablespoon of paprika
  • ¼ teaspoon of dried sage
  • 2 bay fresh leaves
  • 6 cups of chicken stock
  • 4 cups of great Northern Beans, drained and rinsed
  • 3 cup of Kale, stemmed and chopped

In a large stockpot, add the olive oil, onions, and garlic and cook over medium heat until they are slightly caramelized.
Once the onions and garlic are caramelized, add the dry herbs and spices. Cook for 3 minutes.
Pour the chicken stock and beans. Add the fresh bay leaves and stir well. Let it simmer for 5 minutes so that flavors are nicely blended.
Remove the bay leaves and add the kale to the soup. Lower the heat and season with salt and pepper. Let the soup simmer, until the kale is tender.
