  • ½ cup Sliced whole mushrooms
  • 1 large bunch kale
  • 2 cups of wild rice mix
  • ½ cup of cooked diced red onions
  • ½ cup of cooked chickpeas
  • 1 cup of shredded Swiss cheese
  • 1 teaspoon olive oil
  • Pinch of salt
  • 1 tablespoon fresh squeezed lemon juice

In a large bowl, add the kale, olive oil, salt, and lemon juice. Toss the kale with your hands until the kale softens, about 2-3 minutes.
