  • 2 Tbs. Eden Selected Extra Virgin Olive Oil
  • 3 cloves garlic, minced
  • 3/4 C. onion, diced
  • 1/2 C. button mushrooms, sliced
  • 2 sm. organic potatoes, peeled and diced
  • 2 1/2 C. water
  • 1/3 C. celery, diced
  • 1 C. carrots, diced
  • 3/4 tsp. Eden Sea Salt
  • 2 2/3 Tbs. organic unbleached white flour
  • 2 C. Edensoy® Unsweetened
  • 1 1/2 tsp. curry powder
  • 1/2 tsp. turmeric
  • 1/2 tsp. coriander
  • 1/4 tsp. cumin
  • 1/4 tsp. cinnamon
  • 1 pinch cayenne pepper
  • 1 pkg. Eden Organic Kamut Vegetable Spirals
  • 1 C. zucchini, sliced into half moons

Heat oil in a large skillet, sauté the garlic and onion 5 minutes until slightly browned. Add mushrooms and sauté 2 minutes. Add potatoes, water, celery, carrots and sea salt. Cover, bring to a boil, simmer 10 minutes. Place the flour in a bowl. Add a little Edensoy and mix until the flour dissolves. Add remaining Edensoy and mix. Slowly add the Edensoy/flour mixture to the skillet, stirring frequently until sauce thickens. Add the spices, mix and simmer uncovered for 5 minutes. Meanwhile, cook pasta as package directs. Add the zucchini to the sauce and simmer 1 minute. Drain pasta and serve with curry sauce.
