Karen's Homemade Vegetable Soup

This recipe is very tasty on a cold winter day. My mother used to make it too and it's one of my favorites! It has all the vegetables you need plus beef broth!

Ingredients

  • beef broth (and leftover beef if available)
  • potatoes, cut up
  • carrots, skinned
  • corn, removed from cob
  • 1 pkg. onion soup mix
  • 1 pkg. frozen peas
  • 1 pkg. frozen broccoli and cauliflower
  • 1-2 handfuls instant rice
  • 1-2 handfuls noodles
  • 1 med. onion, chopped
  • 1 pkg. green beans
  • salt, pepper, and garlic salt
  • chopped fresh or canned tomatoes
  • 1 sm. can tomato sauce

Directions

For this recipe, you have to use your own judgment on how much of each ingredient to use, as well as the size pot. Remember that the rice and noodles expand when cooked. Add everthing together and cook on slow heat until vegetables are tender and soft. The longer it cooks, the better! You may also cook this in a crock pot.
