Kathy's Soda Cracker Butter Crunch

I once won a prize for this recipe...and I win accolades every time I make it from all who taste it!

  • 1 C. butter
  • 1 C. brown sugar
  • 1 sleeve of saltine crackers
  • 6 12 oz. chocolate chips

Lightly grease a 10" x 15" jellyroll pan and arrange the crackers on it. In a small saucepan, melt the butter and brown sugar over medium heat, stirring constantly. Cook until mixture comes to a boil, and then continue to stir and cook for another 3 minutes. Pour the mixture over the crackers and spread to cover all edges. Bake in a 350 degree oven for 12-15 minutes. (Watch closely toward the end of the baking time though, it can burn very quickly!)

After removing from the oven, sprinkle with as many of the chocolate chips as desired. Let sit for 5 minutes, and then spread the chocolate evenly. Let cool completely, and then break into ragged chunks and pieces. If you are in a hurry, you can put the pan in the freezer for 10-15 minutes to set the chocolate (it's ready when the shine is off the chocolate), then break into pieces and serve.
