Keep Away The Vampires Cheesy Garlic Bread

Garlic bread is just garlic bread, but with cheese on top it brings it to a whole new level. This recipe will definitely keep the vampires away!

Ingredients

  • Ciabatta or other sliced Italian bread that is sort of flat
  • 6-8 cloves garlic, grated
  • 8 Tbs. extra virgin olive oil or other light oil (canola)
  • 8 Tbs. butter or margarine
  • 1/4 - 1/2 C. shredded reduced-fat mozzarella cheese
  • 1/4 C. grated Parmesan cheese
  • 6 grinds black pepper
  • 1 tsp. onion powder
  • 2 tsp. dried parsley or fresh

Directions

Preheat oven to 375 degrees. Slice bread lengthwise and heat about 5 minutes.

Meanwhile, in microwave or saucepan, combine and heat butter, oil, pepper and dried parsley (if using fresh, add at the end for garnish only) until melted. Add garlic and onion powder and mix well.

Before dressing bread, take a knife and cut slices but not all the way through. This will make for easier cutting and serving once bakes.

Place bread halves onto foil lined baking sheet. Paint or pour mixture evenly onto bread. Bake about 10 minutes at 400 degrees. Sprinkle with grated cheese and mozzarella and broil about 4-6 minutes until cheese is bubbly.

Garnish with fresh parsley if using.
