Kerria's Homemade Sweet Potato Pudding

This recipe is a great substitute for candied yams at the holiday dinner. It's great for any holiday or lunch, and it's very kid-friendly and easy to prepare.

Ingredients

  • 5-6 lg. sweet potatoes
  • 1/2 C. light brown sugar
  • 1 C. white sugar
  • 1/2 C. orange juice
  • 2 sticks unsalted butter
  • 3 Tbs. cinnamon
  • 2 tsp. nutmeg
  • 1 1/2 C. heavy cream or canned milk
  • 2 1/2 Tbs. vanilla extract
  • 4 lg. eggs, beaten

Directions

Boil or bake sweet potatoes in their skins. When done, drain sweet potatoes and let stand for 30 minutes. Peel and and mash with a potato masher. Then add the rest of the ingredients. Make sure you beat the eggs before placing them in the rest of the ingredients. Coat an 8x12-inch baking dish with cooking spray. Pour mixture into baking pan and bake at 350 degrees for 30-40 minutes or until firm. Cut into squares and serve warm or cold.
