  • Crust:
  • 1 C. butter
  • 1/2 C. confectioners' sugar
  • 2 C. flour
  • Filling:
  • 4 eggs, beaten
  • 2 C. sugar
  • 6 Tbs. Key lime juice
  • 4 Tbs. flour
  • 1 tsp. baking powder
  • Pinch of salt
  • Pudding:
  • 1 pkg. of instant vanilla pudding mix
  • 2 C. milk
  • 1 can whipped topping

Preheat your oven to 350 degrees. For crust, mix all ingredients and press into 13-by-9-inch pan. Bake for 15-20 minutes. Watch carefully. Combine remaining filling ingredients except for whipped topping in bowl. Pour on top of crust. Bake for 20 to 25 minutes. For pudding, whisk pudding mix and milk in bowl until smooth. Add pudding on top of filling with whipped cream. Cut into bars.
