  • 2 Cubed Yukon Gold Potatoes
  • 8 Ounces of Sliced Andouille Sausage
  • 1 Sliced Jalapeño Pepper
  • 1 Tablespoon of Chopped Green Onion
  • 1 Pinch of Salt (or more to taste)
  • 1 Pinch of Pepper (or more to taste)
  • 1 Tablespoon of Olive Oil

In one skillet over the fire, pour in the olive oil to cook the sausage slices in. Add in the cubed potatoes, ½ of the green onions, salt, and pepper, stirring often to keep everything from burning. If you want it to be extra spicy, carefully remove the seeds from the jalepeños and cook them with the rest of this mix.

In a different skillet, fry the egg as the rest of the meal cooks. Then, add the egg to the top of the potatoes and sausages. Top with jalapeño slices and the remaining green onion and serve warm!
