  • 3 boneless, skinless chicken breasts
  • 2 Tbs. olive oil, divided
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. garlic powder
  • 1 tsp. chili powder
  • 1 large red bell pepper, julienned
  • 1 large bell pepper, julienned
  • 1 green bell pepper, julienned
  • 1 C. shredded cabbage
  • 6 flour tortillas

Place chicken, 1 Tbs. olive oil, salt and pepper in a large plastic bag. Refrigerate for 1 hour. In a large skillet, heat remaining oil over medium-high heat. Add peppers and saute for about 8-10 minutes or until tender. Remove from heat and discard marinade.

Add chicken to the same skillet and cook for 6-7 minutes. Add peppers back to the pan and cook for an additional 2 minutes. Fill tortillas with chicken and peppers. Top with shredded cabbage. Serve.
