Kickin Spicy Smashed Potato Salad

Easy smashed potato salad with a kick. It's a great addition to any BBQ or just something to go with your everyday meal.

  • 8 large baking potatoes
  • 2 C. mayonnaise
  • 2 Tbs. sweet pickle juice
  • 2 Tbs. dill pickle juice
  • 1 Tbs. jalapeno juice
  • 2 tsp. spicy mustard
  • Dash ground pepper and sea salt
  • 1 Tbs. crushed red pepper
  • 1/2 C. purple onion, finely diced
  • 1/2 C. jalapeno, finely diced
  • 4 large dill pickles, finely diced
  • 4 large sweet pickles, finely diced
  • 1/3 C. finely diced celery

Scrub potatoes with a veggie brush and then take fork and pierce the skin all over. This allows heat to penetrate the potatoes. Cook for about 10 minutes on high or until completely cooked through. While potatoes are cooking, in a large bowl add pickles, celery, onions and jalapenos. Then add mayonnaise, pickle juices, jalapeno juice, mustard, salt and pepper and crushed red pepper. Mix really well to blend all the flavors together. When potatoes are done, let stand for 5 minutes and then skin and smash potatoes in a large bowl. Add dressing to smashed potatoes, mixing really well. This can also be mixed together in a electric mixing bowl.
