Kielbasa and Potato Skillet
Serving Size / Yield
- 1 lb. baby red potatoes
- 3/4 lb. kielbasa, cut into 1/4 in. pieces
- 1/2 C. chopped onion
- 2 cloves of garlic, minced
- 1 Tbs. olive oil
- 2 Tbs. brown sugar
- 1 Tbs. Dijon mustard
- 1/2 tsp. dried thyme
- 1/4 tsp. pepper
- 4 C. fresh baby spinach
- Feta cheese
Cube the baby red potatoes and microwave until they are tender and set aside.
In a large skillet over medium heat, coat the pan with olive oil and sauté the kielbasa, onion and garlic.
Once the onion is tender, add the potatoes to the skillet along with the brown sugar, dijon, thyme and pepper. Allow the mixture to bubble.
Reduce heat and add in spinach.
Once the spinach is wilted, remove the skillet form heat and transfer to a serving bowl.
Sprinkle crumbled feta on top of the dish.
