  • 2 sleeves cinnamon graham crackers
  • 1 stick butter, melted
  • 1 (8 oz.) package cream cheese, softened
  • 1 (12 oz.) can sweetened condensed milk
  • ½ C. lime juice
  • 1 T. lime zest
  • 2 tsp. vanilla extract
  • 1 (12 oz.) container whipped topping

Using a food processor, pulse together graham crackers and melted butter until crumbly. Press crumbs into the bottom of a cheesecake pan reserving ¼ cup for topping. In a large bowl, combine cream cheese, sweetened condensed milk, lime juice, lime zest, and vanilla extract with an electric mixer until creamy. Fold in whipped topping and pour over crust. Top with remaining graham cracker crumble and refrigerate for at least 4 hours.
