Kiwi Walnut Bread

The tropical fruit is an unexpected treat in this yummy bread.

Ingredients

  • 2 C. sifted all-purpose flour
  • 1 C. granulated sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1-1/2 C. canned or cooked kiwi, drained and chopped
  • 3/4 C. chopped walnuts
  • 1 large egg, beaten
  • 1 C. melted butter or margarine
  • 1 tsp. pure vanilla extract
  • 1 small contained whipped cream cheese

Directions

Preheat oven to 350 degrees F. Sift flour together with sugar, baking powder, baking soda and salt into a large bowl. Add kiwi and nuts and mix well. Add egg, butter and vanilla extract. Stir until just blended. Turn into greased and floured 9 x 5 x 3-inch loaf pan. Bake at 350 degrees F for 1 hour or until cake tests done. Cool in the pan for 5 minutes. Then turn out onto wire cake rack to complete cooling. Serve in thin slices spread with softened cream cheese.
