Knefia Soup

Thick and hearty soup with lots of veggies and ham or bacon.

Ingredients

  • 6 potatoes, cubed
  • 2 onions, finely chopped
  • 1 carrot, finely chopped
  • 2 stalks celery, chopped fine
  • 5 cubes of chicken bullion
  • 1 tsp. parsley
  • 2 qt. water
  • 1 Tbs. salt
  • 1 tsp. pepper
  • 1/2 C. butter
  • 1-1 ½ C. ham or fried bacon, finely chopped
  • 2 C. flour
  • 1 egg
  • 1 C. milk
  • 1 tsp. salt
  • 1 can evaporated milk (save for later)

Directions

Combine all ingredients from potatoes through ½ C. butter (and meat if you are using it) and cook one hour. In a separate bowl, mix flour, egg, milk and salt. Drop flour, egg, milk, and salt mixture by tsp. into boiling soup. Cook for 45 minutes then take off heat, add evaporated milk, and serve.
