Kona Coffee Pepper Steak

  • 2 C. Kona Coffee; strong brewed
  • 2 12-18 oz. Filets of Beef; tenderloin
  • 1 C. of Coarse Black Pepper
  • 1 Stick of unsalted butter
  • Fresh Ginger
  • ½ C. of Cognac (Courvoisier V.S.)
  • 1 Fresh ripe Mango
  • 1 Major Grey's Chutney

Marinate filets of beef in Kona Coffee at least 12 hours before serving. Coat one side of the beef with pepper and set aside. Heat sauté pan and add butter. When hot, lay beef down, pepper side first. Add slices of ginger while cooking. Turn and add chutney and Cognac and remove beef when done to the right temperature.

  • I intend to try this, but I don't know how to find the Major Grey's Chutney. Also, I don't like Cognac, was hoping maybe I could substitute a couple of minitures of Grand Marnier instead..... so if anyone knows..... and if not, I will eventually get everything and try it and let you all know.
