Kwanzaa Salad
Ingredients
- 1 C. quick-cooking barley
- 1 19 oz. can black beans, rinsed and drained
- 1 large red bell pepper, chopped
- 1 large green bell pepper, chopped
- 1/2 C. parsley, chopped
- 2 shallots, finely chopped
- 1/4 C. olive oil
- 2 Tbs. white-wine vinegar
- 1 1/2 tsp. ground cumin
- 1/2 tsp. sugar
- Salt and pepper to taste
- 6-8 drops hot pepper sauce, or to taste
Directions
Bring 2 C. water and 1 tsp. salt to boil in medium saucepan. Stir in barley adn simmer 8-10 minutes, or until tender. Remove from heat and let stand 3 minutes. Meanwhile, in large bowl, combine beans, peppers, parsley and shallots. Add cooked barley and toss. In small bowl, whisk together oil, vinegar, cumin, sugar, salt and pepper and hot sauce. Pour over salad and toss until thoroughly combined.
